I make “challenge” lunches with whatever I have on hand. These two were particularly tasty.
Cincinnati-style chili spaghetti, made with a can of chili, a handful of spaghetti noodles and the rest of a block of jalapeno havarti cheese.
Stir-fry made with a little leftover chicken, some assorted vegetables and leftover noodles from the previous night’s dinner. Plus, you know there was some bottle gourd in there.
